Os Oligosaccharides são construídos das unidades do monómero do hidrato de carbono que contêm grupos de hidróxilo múltiplos, junto com amino e grupos carboxyl. Proteger agrupa o jogo um papel vital na síntese do oligosaccharide enquanto ajudam em diferenciar não somente o mesmo tipo de grupos funcionais mas igualmente dos grupos funcionais diferentes actuais no hidrato de carbono.
