    Tests for testing for celiac disease are unreliable. If you have have been off of all gluten for a period of time the blood test may come up negative.

    Although I agree with gluten free products not containing the right nutrients it comes down to education. A lot of the gluten free packaged foods are just as refined and processed as their non gluten counter parts! Look for whole grain gluten free grains and be sure to have 6-8 servings of veggies, fruits, nuts, seeds and good quality protein from sustainable wild caught fish, grass feed/finished pasture raised beef, poultry and game meats, dairy and eggs.
