Scientists determine structure of green pigment seen in nitrite-cured bacon, other meats

As with many concerned consumers, a team of University of Oklahoma researchers wondered if the green color sometimes seen in bacon is, in fact, harmful to human health. Recently, these OU scientists took an important first step in answering this question by determining the structure of the green pigment responsible for this 'nitrite burn.'

Gas NO plays a fundamental regulatory role in controlling bacterial function

Bacteria provide a well-known playground for scientists and the evolution of these earliest life forms has shed important perspective on potential therapies for some of the most common, deadly diseases. Researchers at Case Western Reserve University School of Medicine have now discovered that, the gas nitric oxide (NO), produced in all cells of the human body for natural purposes, plays a fundamental regulatory role in controlling bacterial function, via a signaling mechanism called S-nitrosylation (SNO), which binds NO to protein molecules.

A group of Chinese and Australian scientists, including CSIRO, have developed a handheld, battery-powered plasma-producing device that can rid skin of bacteria in an instant. The handheld plasma flashlight could be used in ambulance emergency calls, natural disaster sites, military combat operations and many other instances where treatment is required in remote locations.

Judy Weimer, 53, was diagnosed with COPD, emphysema and bronchitis on New Year's Eve in 2005 and received a double-lung transplant in 2009 at Loyola University Health System. "I named my new lungs Lucy and Ethel to welcome them," said the humorous and outgoing Chicagoan. "Lucy acts up once in a while but they are both working fine."

Beta cells from genetically modified pigs can effectively restore pancreas function

Transplantation of a whole pancreas or isolated insulin-producing beta cells are the only therapy to cure type 1 diabetes. However, the shortage of organ donors limits this approach to only few patients. LMU researchers have now shown that beta cells from genetically modified pigs can effectively restore pancreas function and can protect porcine beta cells from immune rejection in animal models.
