About 8 hours after being scoped, I developed symptoms consistent with appendicitis (did not know it at the time).  The symptoms abated after about a week.  The symptoms re emerged about 10 weeks later, much worse, resulting in an appendectomy.  I think the original flare up, immediately following the endoscopy procedure is very strong evidence (not a coincidence), of a correlation.  I hope medical professionals are considering this and pursuing ways to lower this risk.
